Homemade Dessert Decor

Sorry to the dark pic...obviously I am not a food photographer. 🙂

Today seems to be all about SUGAR! hehe 🙂 I guess the baby has a sweet tooth like her momma :).

I wanted to share with you an easy, inexpensive way to make your own colored sugar (for dessert decorating) that my momma shared with me this week. Every cup of this stuff comes to be about $0.25…compare that to the store bought version (that is loaded with other unnecessary junkie junk) that usually costs between $2-$3 per bottle.

It’s so incredibly easy!

In a small bowl with a lid add:

1 cup sucanat (unrefined cane sugar)

3-4 drops of the food coloring of your choice ( I used 4 drops of red and got a nice pink color.)

Put the lid on the bowl and shake vigorously until the sucanat turns the color of your choice.

Sprinkle on the dessert of your choice and enjoy (sparingly of course;))

This would be a fun project for the kiddos if they are helping you out with the baking!


Homemade Chocolate Chips

I recently happened upon a blog that has quickly become a favorite of mine. It’s called Heavenly Homemaker. The name itself brings me hope that it is possible to be a heavenly homemaker instead of a frazzled one (which I’m sure I may be on some days).

Besides having great posts, my very favorite part of the blog is the recipes section (which is where I found this amazing chocolate chip recipe).

Now I won’t be munching on these oh so sweet morsels everyday, but I would much rather prefer throwing some homemade chocolate chips into my occasional batch of homemade chocolate chip cookies than using store bought chocolate chips with a list of ingredients longer than the Great Wall of China :).

I wanted to share this jewel of recipe with you because it’s easy, cheap to make, and about as healthy as you can get when it comes to chocolate chips :). Happy Cooking!

Healthified Chocolate No-Bake Cookies

UPDATE: If you freeze these babies for a couple of hours, they have a texture and taste very similar to the Little Debbie Starcrunch!! YUM!

I was rather sketptical when I found this recipe in The Anti-Infammation Diet & Recipe Book. The classic Chocolate No-Bake Cookies are probably my very favorite cookie…which is why I decided to give these a try and boy oh boy am I glad that I did!! They were hit with my parents as well as with a few select friends who agreed to be my guinea pigs 🙂 Thanks ladies!!

I didn’t make them exactly as they are in the recipe book…I had to tweak it just a little.  🙂 You should also note, that they do not taste like the standard Chocolate No-Bake Cookies.

They taste different- but in a delcious, melt-in-your-mouth  kind of way! Another plus is that you don’t feel like you need to go brush all the sugar off your teeth after you eat them! 🙂

Also, you can whip these babies up in no time. It only takes a few minutes to mix it all up. Then stick them in the fridge to chill. 🙂

So here is my version of the recipe.

Healthified Chocolate No-Bake Cookies

3 1/2 cups of oats

3/4-1 cup honey (Start with 3/4 and then taste it to see if you’d like it a little sweeter.)

5 tsp cocoa powder (If you are following the anti-inflammation diet, use carob instead of cocoa.)

2 tsp vanilla extract

1 cup almond butter (or any nut butter would work-peanut butter, cashew butter, sun butter, etc)

1/4 cup melted butter

Mix all these ingredients by hand with a spoon and then spoon out on a cookie sheet. Place in the fridge or freezer to chill for about 30 minutes. These cookies will not get hard. After they are chilled, they will still be gooey but not be falling apart.

No-Bake Chilled Double-Chocolate Torte

Healthy? Balanced?

One of the biggest challenges with healthy eating is birthday celebrations and family get-togethers. Can I get an AMEN?

Recently, we had a birthday celebration for my brothers and sis-in-law and I was in charge of the desserts. I took this great opportunity to try out a healthier option for birthday cake and pit it up against the not so healthy (but pretty delicious) Strawberry Cake.  So I set out on my search and happened upon this incredible dessert made by the equally incredible Angela at Oh She Glows.  Did I say that this is incredible? Yeah…this dessert was gone in 60 seconds and left my Strawberry Cake in the dust! Look at the picture! Of course the No-Bake Chilled Double-Chocolate Torte took the win!
