Weekly Menu Plan 1/9-1/15

This week, we are trying to eat up what we have in the pantry/freezer/fridge. 🙂 All that I plan on buying this week are fresh fruits & veggies.

Breakfast:

Monday- Leftover Overnight Pancakes, Scrambled Eggs, & Blueberries, coffee

Tuesday & Wednesday-  Gallopinto , toast, fruit, coffee

Thursday- Pretty Purple Protein Smoothie, Toast, Scrambled Eggs

Friday- Breakfast Burrito (eggs, Homemade Turkey Sausage, tomato, & cheese), coffee

Saturday- Tamales, Coffee

Sunday- Fortified French Toast, Bananas, Coffee or Orange Juice

Lunch: We always have leftovers :)

Dinner:

Monday- Vegetable Soup, Grilled Cheese

Tuesday- House Fried Rice (w/ Brown Rice)

Wednesday- Red Potato Casserole w/ Turkey Sausage

Thursday- Tuna, Rice, Beans

Friday- Cheat Meal Night-Pizza & Wings

Saturday-  Crockpot Whole Chicken, Honey Butter Carrots, Oven Baked Fries

Sunday- Chicken Garbonzo Bean Nachos, platanos, side salad

Snacks:

Yogurt w/ granola

Smoothies (Pineapple w/yogurt and Strawberry/Banana w/ Orange Juice)

Fruit (Oranges, Bananas,Blueberries)

Apples & Almond Butter (MY FAVORITE!!!)

Turkey Lettuce Wrap

Applesauce Bread with Honey Butter

Healthified Coconut Macaroons ( I didn’t make these last week so I wasn’t able to post the recipe but I will be posting this recipe later this week.:))

  1. I love almond butter, too, especially when I realized it didn’t have any sugar in it.

    The Gallopinto looks really interesting. Caveat – the kids won’t try it, or my dh, however, it sounds like a great breakfast dish for rushed mornings. Does it reheat well?
