Have leftover chicken and don’t know what to do with it? Have a can of garbanzo beans you bought on sale and you are not sure what to do with them? Well I did, and that’s how I came up with Quick and Easy Chicken Garbanzo Nachos. All you have to do is bake it and then serve it on some tortilla chips or plantain chips! Yummmmy!
Quick and Easy Chicken Garbanzo Nachos
1 Can Garbanzo Beans, drained and rinsed
1-2 Cups Chicken Breast, shredded (You could use dark meat as well.)
½-1 tsp Cumin
½ tsp Black Pepper
½-1 tsp Chili Powder
1 Can Rotel Tomatoes with Mild Green Chilis (Or Fresh Salsa if you prefer)
1 Green Onion, chopped
2 sprigs Cilantro, chopped
Optional: Crumbled Goat Cheese or Shredded Cheddar Cheese
Pre-heat oven to 400 degrees. If using Cheddar Cheese, shred about ½ cup-1 cup. Mix all ingredients, except cheese, together in casserole dish. Cover with foil Bake for 15-20 minutes. If using cheddar cheese, top with cheese and bake uncovered until browned (about 3-5 minutes). If using crumbled goat cheese, there is no need to bake for any additional amount of time.
**SERVE ON TORTILLA CHIPS OR PLATACONES OR PLANTAIN CHIPS 🙂
