Monday- Omelet w/ Cilantro & Homemade Turkey Sausage, Orange slices
Tuesday- Scrambled Eggs, toast, fruit
Wednesday-Overnight Oats, Toast, Grapefruit
Thursday & Friday- Gallopinto , Eggs, orange slices
Saturday- Downhome Breakfast Special (Hashbrown Casserole), Eggs, Orange Juice
Sunday- Fortified French Toast, Bananas & blueberries

Monday- Homemade Chicken Nuggets with Homemade Honey Mustard, Baked Sweet Potato, Side Salad with homemade ranch dressing
Tuesday- Crockpot Whole Chicken, Side Salad, Honey Carrots
Wednesday- Chicken topped with salsa & avocado, Brown Rice, Platanos
Thursday- Meatloaf, Mashed Potatoes, Steamed Broccoli
Friday- Eat Out with my buddy
Saturday- Tuna Casserole
Sunday- Arroz Con Pollo, Beans, Platanos

This looks great! I’m impressed with your breakfast. My husband wishes I would cook like that every day, but in reality, I’ve got to keep breakfast M-F as something quick. And I’m not sure that I could handle the prep, cooking, and cleaning of three hot meals every day!
I understand. It is hard some days to get the food on the table. I do as much prep the night before as possible. Some of the breakfasts, like gallopinto, overnight pancakes, & oats, I make the night before and then just heat them up in the morning. Scrambled eggs and toast for just two people only takes about 4 minutes to throw together so on the mornings I wake up late, no matter what is on the menu for that day, we usually wind up eating the eggs and toast haha
